Here's a lighter and fresh alternative to mashed potatoes. I've gotten some weird looks when I say cauliflower but once they've had a taste of it - they're sold on the idea.
Cauliflower Puree
2 cauliflower heads
Milk
Olive oil
Salt
Pepper
4 cloves of Garlic
1/2 stick of unsalted Butter (optional)
- pre heat your oven to 400 degrees
- clean the cauliflower and cut into flowerettes
- boil half of the cauliflowerettes in milk, butter & garlic - enough milk(can add water if you want) to cover the veggies (watch the pot closely - the milk will bubble up!) - until tender
- put the rest of the cauliflowerettes on a baking sheet - toss them in olive oil and season with salt and pepper and put in the oven and roast for approximately 20 min or until tender and a little charred.
- put the drained boiled cauliflower in the food processor and puree (be careful - it's hot!) - you can add some of the milk to achieve desired consistency - I usually don't need to.
- mix the roasted cauliflower with the puree for consistency - add salt and pepper to taste - you may also add whatever herbs/spices you like to put in your mashed potatoes.
This makes a great side to pretty much whatever! :)
